Quinoa with Microgreens

Quinoa is another one of those super versatile foods that can be mixed into almost any salad.

I love mixing quinoa with pretty much anything. Here is an easy mix to make with the early-spring greens known as microgreens. You can read more about the super powers of these micro-miniature greens in my blog post about them.

ingredients

  • black quinoa (you can also use white or red), 1/2 cup per person
  • pine nuts
  • microgreens

method

Cook the quinoa:  Use 1 1/4 cup of water per 1/2 cup of quinoa, and add a dash of sea salt. Simmer for 20 min. Check that the water is gone; each quinoa grain should look like a tiny sprout.

Allow the quinoa to cool, then mix with fresh micro-greens right before serving. (The greens will wilt if you put them in when the quinoa is hot.)

Add pine nuts and olive oil, along with any other seasoning you like. Enjoy!
