Chickpea Patties, my newfound love.
I am still experimenting with vegan patties—I like having an alternative to my daily fare of legumes. These are nice for a small meal or a bigger meal, a snack or a party—and any garnish helps make it a little festive, too.
ingredients
- 1 cup cooked / canned chickpeas
- 1 carrot
- 1 tbsp hemp seeds
- 1 cup chopped kale (raw or marinated)
- 1 scallion
- 1/2 tsp red pepper corn (whole) any color will do (mix orange peel…1/2 tsp)
- 1/4 tsp of sea salt
- 1 clove garlic
- 1/4 cup oats
- 1/2 tbsp olive oil
- If you don’t need the patty to be vegan add 1 whole free-range GMO-free egg.
method
Mix all the ingredients in a blender at low speed so you get a more chopped mix rather than a coarse paste—you don’t want to make it into hummus.
Form into patties. I am told it is best to keep them overnight in the fridge before cooking. I did not do that so it was a bit more challenging to keep them formed when turning them over, but they still tasted great.
Cook the patties for about 8-10 min. on each side in a pan on the stovetop with a little cooking oil.
You will get 3-4 patties depending how big you make them.
Serve with greens and add some microgreens as garnish.
