Arugula and white bean salad with sun-dried tomatoes
This is a really nice light bean salad that has a little peppery taste from the arugula, with the smoothness of the beans and the sweetness of the sun-dried tomatoes
- 1 cup white beans per person / portion
- 2 cups arugula per person / portion
- 2 sun-dried tomatoes per person / portion
- 1/4 cucumber per person / portion
For the beans (using canned beans) – add sea-salt and pepper and olive oil to taste before mixing with the rest of the ingredients. If the canned beans are already salted then wash them first and then see if they even need salt.
Chop and add the sun-dried tomatoes and cucumber
Mix with the arugula
Add more olive oil if needed. Add spices if you would like to add a taste of something. I like a couple of chili flakes for some spice.
