I loooooove roots.
They are great for a summer salad and you can make up a big batch and use them with different salads throughout the week. Add them to kale salad, grain salad, quinoa or legumes. Just easy and amazing.
1 1/2 cup each
- chopped each carrots,
- (yellow) beets,
- sweet potato
- small grape tomatoes,
- 8 whole cloves of garlic
- 1 tbsp grated ginger,
- 3 tbsp sesame oil,
- 1 pinch chili salt,
- 12 whole black pepper corn crushed
Pre-heat the oven to 425 degrees.
Put the veggies in a baking dish and pour the dressing over it.
Bake it in the oven for about 45 min. Stir the veggies about 25 min. into the cooking time.
Enjoy! Here it is served with pistachios and marinated kale.
