Time for grilling?
Spring and summer is time to get outside to cook but you cannot always grill if you live in an apartment but there is a solution. I use a panini maker for spring/summer indoor cooking because it is so easy and fast without being stuck in the kitchen cooking on a hot stove when you would rather be outdoors.
Being a Dane I like to be outside as soon as I can, so when I am in the city (or rather in my apartment in Brooklyn) I like to still have my grilled veggies. Simple cooking is more fun, so make it easy and simple with good ingredients, and you will have a nourishing meal in moments.
Think… Real food makes simple good.
Slice your veggies up and give them a slight coating of oil or use a potato sliced open to coat the grill for non-sticking.
Here I used sweet potatoes, yams, cauliflower instead of steak and added a soft-boiled egg on top, which is of course optional for vegans. Serve with a side of marinated kale and you are good to go. Fast brunch or dinner for some healthy summer cooking. Serve with some sprinkles of sesame seeds and chili flakes (or any spice you like).
We added some sautéed ramps but scallions or onions work too and you can grille them as well instead of getting the sauté pan out.
