Kale, Quinoa and Currants

Kale me again

It is no secret that I love kale and I love quinoa. They are both soooo easy to make and fit into just about any meal. So why not make both! This one has become a favorite salad because it is fresh, crunchy and filling, super versatile and it is two super foods in one. Both quinoa and kale are packed with nutritional benefits and the pine nuts help dot the i.

Ingredients:

  • quinoa – either color will do but here I used black quinoa. 1/2 cup uncooked quinoa for 1 cup cooked quinoa.
  • kale – use the whole bunch – about 1-2 cups per serving depending on how big a salad you want
  • currants – 1/4 cup
  • pine nuts – 1/4 cup
  • olive oil
  • sea-salt
  • mirin or brown rice vinegar

Method:

Wash the quinoa well and add it to a pot, use 1/2 cup quinoa with 1 cup of water, it makes 1 cup quinoa

Add a dash of sea-salt and bring to a boil, then lower to a simmer for 20 min.

Marinate the kale (you can find that recipe under the marinated kale recipe)

When the quinoa is ready, mix it with the the kale, add a little olive oil and mix it all then add the currants and pine nuts before serving.

You can re-proportion the kale and the quinoa to get more of a kale salad with quinoa or a quinoa salad with kale.
