Make it a healthy one!
I like chocolate, but only if it is rich, dense and as close to 100% as can be.
That is what makes it healthier with higher anti-oxidant content. Avoiding processed sugar and dairy is also crucial for a healthy cookie. But being healthy does not have to take away from tasting good. These macaroons are easy to make and great for an afternoon (re)treat or as small dessert-taste after a nice dinner.
ingredients:
- 1/2 cup almond flour
- 1 cup coconut flakes
- 1/4 cup 100% cacao powder
- dash of sea-salt
- 4 tbsp coconut oil or 1/4 cup coconut milk (canned)
- 2 tbsp raw honey or 1/8 cup maple syrup (if you want them sweeter you can use a bit more)
- you can add 1 egg but then it is no longer a vegan cookie.
Makes 10
method:
Mix everything together in blender, make round balls (about a 1 tbsp. each) and put them on a baking sheet.
Bake them in a pre-heated oven at 350 degrees for 12-15 min.
Take them out to cool on a rack.
Serve 1 or 2 with a good cup of tea.
