Sweetness for dinner?
I have always had a sweet-tooth I think. At least as far back as I can remember. But it does not haunt me anymore because I add sweetness into my meals by adding sweet vegetables instead of going for dessert. Right now butternut squash and apples are in season so why not make a side-dish with both.
INGREDIENTS:
- 4 cups cubed butternut
- 1 cup cubed apple
- 1 leek
- 1/2 tbsp crushed red peppercorn
- 1 tsp orange peel
- large dash of sea-salt
- 1 tbsp cooking oil
METHOD:
Chop your different ingredients into cubes and mix everything in a baking dish.
Put it in a pre-heated oven at 350 degrees for 55-65 min. depending on how baked you like it.
If you use a cooking oil for higher temperatures you can go to 425 degrees for 45-55 minutes.
