I have a weakness for gazpacho.
Even though I don’t like tomato soup or any drinks or sauces with a lot of tomato, somehow this tomato gazpacho really works for me.
Here is my recipe for it:
Ingredients:
- 2 1/2 cup tomato
- 1 cup cucumber
- 1/2 cup fennel
- 1/4 cup basil
- 1/4 cup onion
- 1 garlic clove
- 1/2 tsp sea-salt
- 1 tsp red pepper corn
serves 2
Method:
Mix it all in a blender and serve it up. Chill it in the fridge for about 30min. before enjoying if you like it cold. I prefer my food room temperature so I just make it and eat it.
