Hummus is a favorite snack food.
You might want to consider making your own. It helps cut down on garbage, and your snack budget! If you have a blender – you can make hummus. This one is a simple and easy recipe.
Ingredients:
- Chickpeas, dried (you can of course used canned but then we have garbage after all).
- Garlic, a couple of whole cloves, depending on how much of a garlic lover you are.
- Sea-salt
- Fresh ground pepper, or whole peppercorn
- Olive-oil
- Lemon juice (optional)
Serves 3-4
METHOD:
Soak the dried chickpeas overnight. Use 1 cup of dry chickpeas for snack portions for 3-4 people, if you want to make more of a meal portion use 2 cups dry chickpeas. After soaking, rinse and add the chickpeas to pot and cover in water (use about 2 cups of water if you started with 1 cup of dry chickpeas). Add a tablespoon of whole pepper corn and boil for 45 min.
Roast garlic first on a pan. Use about two whole cloves per 1 cup of chickpeas…if you like garlic. You can boil the garlic with the chickpeas, but roasted garlic tastes amazing with this.
Add all of it to a blender, add a large pinch of sea-salt and ground pepper. Add two tablespoons of olive-oil and if you need a little water to get it going do so, but not too much as it will become too thin. You can add a little lemon juice to taste if you like.
Blend and serve with cut up veggies.
