Watermelon Gazpacho

Chilled soups are great for this time of year.

It is still warm so chilled soups are refreshing, but we are also nearing the end of summer and we want some foods that help us transition the season. They are particularly great because they are both light and filling meals.

INGREDIENTS:

  • 4 cups watermelon
  • 2 cups cucumber
  • 1 cup basil leaves
  • 1 tsp red peppercorn
  • 1 tsp garlic sea salt
  • 1/2 cup scallion or spring onion

METHOD:

Mix everything in a blender, chill before serving or use chilled ingredients before making the soup. Watermelon oxidizes pretty fast so pour it into a closed container if you are not eating it immediately.
