Cucumber-Pea Soup

Fresh and nourishing. Light and easy.

Cucumber is a nice kidney tonic and is nice to have a little detoxing soup. Peas are a surprising “easy to have in your freezer food”, that is high in phyto-nutrients and even contain omega-3 fatty acids.

INGREDIENTS:

  • 3 cups cubed cucumber
  • 1 cup frozen organic sweet peas
  • 1 apple (optional)
  • 1/2 cup leek or you can use sweet onion
  • 1 tsp garlic sea salt or roast 1 glove of garlic first before adding to the blender
  • 1 handful of mint leaves and lemon verbena (or just mint)
  • Serves 2

METHOD:

Mix everything in a blender. You can either serve it chilled or heat it slightly. It will change color when you heat it but a warm pea-soup is really light and lovely. Once it is made it oxidizes pretty fast so pour it into a closed container if you are not eating it immediately.
