Chia Pudding “Yoghurt”

Chia is all the rage these days.

If you wonder why; it is because this little tiny seed, also better known from the Chia Pet, is quite the superfood.

Chia seeds expand about 30 times their size, which to begin with is about the size of a poppyseed. It turns into a little ball that could look like fish eggs, but it is a gelatin super packed (weird) bubble of nutrients.

Chia gives you high omega-3 fatty acids, protein, slows down your absorption of food, which is good because it keeps you full for longer. This also means chia seeds fill up your stomach so you can be more satisfied from your meal.

Does it work?

You will have to be the judge of that. First time I tried to put chia-seeds in my morning oats, I came back to find little “eyes” looking at me. I was a bit surprised but I realized it was the seeds that had swollen up and I had a good laugh. So, if you add it dry, hurry up and eat before the swell, that way they will expand in your stomach instead.

If you soak them you can make anything from puddings, desserts, smoothies and this “yoghurt” type breakfast or snack-food.

This is something to prepare at night for the next day so it is perfect for the busy, who want to have food ready to grab. You can make it in my favorite to-go cup; the mason-jar.

INGREDIENTS:

1 tsp chia

1 cup chopped peach, you can use the whole peach and just make an extra portion. You can also use other fruit of course. Dates would be great for a more “warming” feeling.

3/4 cup oat-milk

Serves 1

METHOD:

Blend the peaches and oatmilk in a blender, add the chia seeds after blending

Pour in glass and leave it in fridge overnight.

Enjoy as a smoothie or a “yoghurt”
