Let’s be Nourished

We need it. When the world around us seems to be falling apart, when we are anxious about what is coming our way, or when we feel powerless in the face of life, we tend to want to self-soothe. NO JUDGEMENT PLEASE! Because that is the most normal behavior we humans have. Heck, even the animals have it too!

SELF-SOOTHE

We learned to self-soothe sometime around …the beginning of our life. What we used back then was a bit different than now. This for example was my favorite:

As adults…

We need other ways, well of course a teddy bear is still fine but not as socially accepted as food in the public eye perhaps. So that means carbs and fat. Don’t be so surprised by your cravings and don’t think they are wrong. It is how you act and react to them that makes the difference between a nourishing choice and one you may not feel so nourished by…afterwards.

 

RISOTTO / PAELLA

Serves 4-6

INGREDIENTS:

  • 2 1/2 cups of brown rice
  • 4 cups of water
  • 1 cup of wine (white or rose), stock or water can be used too.
  • 1 pinch of salt
  • 1 whole onion
  • Cooking oil (untoasted sesame oil or olive oil)
  • 5 cloves garlic
  • 1 whole Jalapeño (take the seeds out)
  • 2 green peppers
  • 2 lb shrimp
  • Sea-salt
  • Cooking oil
  • Olive oil

METHOD:

Cook the rice on slow heat and add an additional cup of wine after it is cooked and keep cooking on low heat to absorb the water and make the rice really soft.

In another pan sautee chopped / sliced onion and 3 tbs of cooking oil or olive oil, add the 5 cloves of garlic roughly chopped.

add 1 whole Jalapeño (take the seeds out) sliced

2 green peppers blackened on a grill and peeled (you can blacken it on the gas fire too) cut into half inch strips and add it to the mix.

Add 1/2 a cup of wine, or stock or water and cook for 20 minutes

Add mixture to cooked rice and add peeled shrimp.

Cook on low to medium heat for about 5 minutes until shrimp are pink and cooked through. Don’t overcook – they become hard.
